Since the flat tables migration the category_ids had accidentally been removed.
This was used on category pages as part of it's filtering, however for compatibility to prevent errors this line was added when moving to instantsearch:

When a document has no category_ids field it will not attempt to filter on it and create errors (useful when using the listing component for Categories, search suggestions, blog pages, etc.) but now it didn't filter it on the Product listings either.
This caused products to seemingly jump around as the categories filter was loaded,
