Why
With react-native-macos to 0.81.1 out, we can finally bump Orbit to SDK 54

Bump react-native-macos to 0.81 and bump expo dependencies by running
npx expo install --fix.Had to patch
react-native-svg(software-mansion/react-native-svg#2862) andexpo-modules corefor now (I'll send a follow PR fixing this in the sdk-54 branch).Kept new arch disabled for now due to some UI issues, I'll try enabling it in another PR
